About this Recipe

Real comfort food! The taste of our Beltie beef makes this cottage pie super-special.

Serves: 6

1 tbsp olive oil/beef dripping

700g minced beef

1 large onion

2-3 carrots

Tin tomatoes

Beef stock

Herbs such as thyme or rosemary (fresh or dried)

Salt & freshly ground black pepper

Pre heat the oven to 180°C (325°F/Gas 3)

Season the mince and brown in a pan.

Add a chopped onion, chopped carrots and cook for a few minutes.

Add 1 tin of tomatoes and about 1 pint of beef stock.

Add some herbs if you like – rosemary and thyme are good.

Bring to the boil and then leave to simmer on a low heat.

While the sauce cooks peel the potatoes and steam/boil until tender. Mash with plenty of butter and season.

Spoon the mince mixture into an ovenproof dish and cover with the mashed potatoes.

Sprinkle with cheese and cook in the oven until the cheese is golden and melted.

Optional extra: Fry some chopped leeks in butter and when soft add with cheese to top before baking.

Fancy a change? Swap out the potatoes for celeriac and parsnips.
