About this Recipe
This is a great dish for supper and easy to make. Our kids love to help with this recipe by rolling the meatballs!
Serves: 4-6
Ingredients
800g Minced beef
Rosemary
Chives
Salt & Pepper
Tomato sauce:
1 tbsp olive oil
1 onion
2 garlic cloves
1 handful fresh oregano or ¹/² tsp dried
Salt and pepper
2 x 400g tin chopped tomatoes
2 tbsp tomato puree
Instructions
.Heat oven to 180°C / 350°F / Gas 4.
Place the minced beef in a bowl, season with salt and pepper then sprinkle with rosemary & chives .
Mix well with a spoon or your hands. (Our kids are experts at this!)
Squeeze into golf ball sized meatballs, place on a greased/lined baking tray (wash hands).
Cook in a preheated oven for 20 – 25 minutes (cut one in half after 20 minutes and if there is any pink inside return to the oven for another 5 minutes or until cooked right through)
Meanwhile you can make the tomato sauce:
Heat the olive oil in a pan over a medium- low heat, add the onion, garlic, salt and pepper cook until the onions are soft.
Chop the oregano, add to the pan and stir in the tomato puree.
Add the tomatoes, put the lid on and leave to bubble for about 10 – 15 minutes, until it has thickened up a bit.
Once the meatballs are cooked pour any excess fat out of the baking tray.
Pour the tomato sauce over the cooked meatballs, sprinkle with cheese and return to the oven until melted and golden.
We like to serve ours with pasta and salad, Beltie Balls are also great with crusty bread.
