Rib is considered to be the ultimate roasting cut. It’s lean meat is beautifully marbled which helps to keep it tender, the bone keeps in moisture and flavor.


4 rib Forerib of Beef

Salt & freshly ground black pepper

Sprig of Rosemary 


pre heat the oven to 220°C (428°F/Gas 7)

Place forerib in roasting tin, season and cover well with foil.

Place in the hot oven to sizzle for 20-30 minutes.

Reduce heat of the oven to 160°C (320°F/Gas 3) and cook for 25 minutes per 450g for medium result or adjust cooking times to taste.

Remove the meat from the oven and leave to rest in a warm place for 20-30 minutes before carving.

Serve with seasonal British vegetables.
