SILVERSIDE

A lean cut from the back of the thigh that was traditionally used for salt beef. Great roasted for Sunday lunch, thinly sliced for sandwiches or is delicious slow cooked with vegetables and herbs in wine or stock.

A lean cut from the top of the thigh which is slightly more tender than silverside so can be cooked quicker. Makes a lovely roast – cook quick and serve slightly pink. Alternatively dice and slow cook for a wonderful casserole.
